The markets have been full of mangoes lately and we've been doing all things mango this season. My favourites are this Mango Cheesecake Ice Cream which is insanely creamy, no churn and with a spot on cheesecake flavor. And these super refreshing and very tropical Mango Bell Pepper Summer Rolls. You can't go wrong with either! Just like these mango kiwi popsicles. The kids love them and it's a perfect back to school treat. But more than that, the adults go crazy about them. They are the perfect excuse to put your feet up, enjoy the sun and relax!
We like to add a little rum in ours to make them a boozy treat which also makes them perfect for Friday night. Or any other weeknight actually. I won't tell if you won't.
These mango kiwi popsicles are really easy to assemble. Blend together mango, honey, yogurt and a bit of lime juice till smooth. Add kiwi slices to your popsicle moulds and press along the sides (yes they stick) and then just pour in the mango mixture and freeze. If you want to make them boozy, add a little rum to the mango mixture and they are done! Perfect cocktail popsicles.
